Garlic Mashed Turnips


We are a potato eating nation. Potatoes are definitely America's favorite vegetable. Did you know that every year we consume about 110 pounds of potatoes per person?


WHY?


The potato chip was invented in 1853 and has been America's number one snack food for more than 50 years. As a chip we love them but a lot of American dinners include potatoes too.


Let me let you in on a healthy substitute that is just as good as a potato. THE TURNIP!


What if I told you:


  • Turnip has the same consistency & texter as a potato

  • Turnip is 8 calories per cup , compared with 59 for russet potatoes

  • Turnip contains 4.2 grams of total carbohydrates, while an equivalent serving of potatoes contains 13.5 grams.

I promise you this Garlic Mashed Turnips recipe is a new side dish that is actually healthier than your Garlic Mashed Potatoes.

INGREDIENTS:


2 medium purple-top turnips

3 cloves garlic minced

3 ounces cream cheese or sour cream

2 tablespoons butter

1 tablespoon finely chopped fresh chives

1/2 teaspoon salt

1/2 teaspoon black pepper


DIRECTIONS:


Preheat oven to 450 degrees


Peel the turnips and cut them into roughly 2-inch chunks, about 16 chunks per turnip.


Add the chopped turnips to the bowl and season with 1 minced garlic cloves, salt, and pepper to taste. Place turnips on a bake sheet and place in the oven, about 20 minutes.


Remove turnips from the oven. Let the turnips sit for about 5 minutes to cool off, and then transfer them to the food processor.


Blend turnip and garlic in a food processor on high setting until smooth. You may need to do this in batches of two or three, depending on the size of your processor.


Add turnip and garlic mix to a bowl and add in the butter, sour cream, and season with salt and pepper. garnish with chives.
