KETO VEGETARIAN PIZZA BITES


As a kid I loved frozen pizza bites, but they never seemed that healthy. You had to eat a bunch and still never felt full.


I decided to share with you a very uncomplicated Pizza Bites recipe that I did for #MeatlessMonday, but you can always add real pepperoni or chicken to make it a carnivore treat on meat loving day. Thanksgiving & Christmas is coming, so this is a perfact appetizer recipe for the holidays too!

I almost forgot this recipe is KETO FRIENDLY!


So remember, I cook it, I eat it, so I know you’ll love it.

CRUST INGREDIENTS:

2 eggs

1/3 cup grated Parmesan cheese

3 tbsp butter melted

1 cup + 5 tbsp almond flour

5 tbsp vital wheat gluten OR another 5-6 tbsp almond flour

1/2 tsp basil

1/2 tsp oregano

1/4 tsp onion powder

1/4 tsp salt

1/4 tsp garlic powder

TOPPINGS:


2-3 Beyond Plant Based Brats chopped

1/2 cup pizza sauce or pasta sauce of choice

3 oz 85g mozzarella or as needed



DIRECTIONS:


Pre-heat oven to 425*F.


Use a fork to whisk together your egg, parmesan cheese and melted butter.


Once mixed, add your almond flour, vital wheat gluten and seasonings..stir well to combine.


Knead the dough with your hand for about 1 min until it completely comes together.


Grease a mini muffin tin with oil. Break off a small piece of dough and begin pressing it into a rough circular shape with your fingers.


Press the dough into the bottom of one of the mini muffin tins and use your fingers to press it up the sides evenly as well. Make sure there aren't any obvious holes.


Place about 1/2 - 1 tsp pizza sauce in the middle of the dough and place your precooked plant based brats on top.


Sprinkle cheese over the pepperoni slice and repeat this process with all of the remaining dough.


Bake for 8 min or until tops are sizzling and crust is lightly browned. Cool for 3-5min before attempting to gently pop them out with a knife.


Serve warm with extra pizza sauce for dipping!

Store in an airtight container between layers of parchment paper in the freezer or in the fridge for up to 5 days.
