Creamy Spicy Curried Parsnip & Apple Soup w/ Ground Taco Meat

I’m back!

Yes, I have been slacking on trying to help you keep your HEALTH on top, but I’ve been collecting new dishes I can’t wait to share!

Today’s winter storm is giving me the “stay indoors after work or a good workout,“ and have some hearty hot soup!


I’m not talking about chicken noodle soup….let’s get adventurous!


I found this low-carb, keto-friendly, and high fiber soup recipe that will warm your cold bones after being out in that cold, cold weather!


This cream-less & dairy-free soup will make you feel like your eating unhealthy. The trick is to add cannellini beans to this flavorful parsnips, apples, and curry soup!

To make it spicy, you can add some chili powder to taste along with Sriracha!

Oh I almost forgot you can add more protein with taco seasoning ground beef.


Remember, I cook it, I eat it, so I know you’ll love it.


Ingredients:

2 tablespoons olive oil

1 medium onion, chopped

2 pounds parsnips, peeled and cut into 1-inch dice

Salt and pepper, to taste

1 pound Fuji or Golden Delicious apples, peeled, cored, and cut into 1-inch dice

1 teaspoon mild or hot curry powder

Small pinch chili powder, or to taste (optional)

4 cups water or stock

1 (14-ounce) can cannellini beans, drained and rinsed

1 lb Lean Ground Beef

1 pack of Taco Seasoning


Directions:

Heat olive oil in a large pot over medium-high heat. Add onions and cook until translucent and just beginning to brown, about 8 -10 minutes.


Add the parsnips, salt and pepper and cook for 10 minutes, or until the parsnips begin to caramelize. Add the apples and cook for 5 more minutes. Stir in the curry powder and chili if using, and cook for 1 minute stirring constantly.


Add the water or stock and cannellini beans. Bring to a boil, then reduce to a simmer for 20 minutes or until the parsnips are very tender.


While that’s cooking you can make ground beef and taco seasoning. Note: Follow package instruction.


Puree the soup mix and taste for seasonings. Add back to pan and heat through and serve with taco ground beef on top with a dollop of Sriracha, and grated Parmesan cheese.
