CAULIFLOWER RICE

Easy cauliflower rice recipe! INGREDIENTS:

1 ⅓ cups Cauliflower Rice (1 medium Cauliflower head)

1 tablespoon extra virgin olive oil

1 clove garlic, minced

1/2 teaspoon paprika

Salt & pepper

1/3 cups vegetable or chicken stock

1 tablespoon thyme leaves, extra

DIRECTIONS:


Heat oil in a medium skillet over medium-high. Place the cauliflower rice in the skillet. Note: If you’re using a medium cauliflower head, put in the food processor first.

Add paprika, salt, stock, and pepper.


Cook cauliflower rice for 7-8 minutes to partially cook the rice. Stirring occasionally. Cover the rice and cook 2-3 more
