Blue Cheese Pork Medallions


I can’t eat the same protein every day! You have to mix your meals and recipes up! This Blue Cheese Pork Medallions is a perfect recipe for a change up.


Pork has a bad rap sheet of not being healthy and that has to do with biblical reasons and bad health advice. Eating pork all the time isn’t good but certain parts of the pig is just as lean as other protein! Read this great article from Food Network - Pork: Good or Bad ! You can eat pork but you need to find the lean parts!

This keto-friendly recipe is high in protein and low in carbs. Yes, more fat than other proteins but we will manage that by making smaller portions that will fill you up. This dish will make you feel fancy and impress your friends and family. Yes, it’s the creamy blue cheese 😂!

INGREDIENT:

1 lbs Pork Loin, cut in half

2 teaspoons Montreal Steak Seasoning (made my own)

2 tablespoons butter

1/2 cup heavy whipping cream

1/4 cup crumbled blue cheese

1 tablespoon minced fresh parsley


DIRECTION:

Place cut pork into a bowl; sprinkle with steak seasoning.


In a large skillet, heat butter over medium heat and add pork.

Cook pork covered, until pork is tender, 3-5 minutes per side.

Remove from pan; keep warm.


Add cream to skillet; bring to a boil, stirring to loosen browned bits from pan.


Cook until cream is slightly thickened, 2-3 minutes.

Stir in cheese until melted. Add pork back into cream or serve cream over the pork. Sprinkle with parsley.
