Blackened Salmon Burger over Cucumber Sauce Zucchini Noodle



Ingredients:

Blackend Seasoning Rub:

1 Tbsp smoked paprika

2 tsp kosher salt

2 tsp freshly ground black pepper

2 tsp onion powder

2 tsp garlic powder

2 tsp coarsely chopped fresh thyme leaves

1/2 tsp cayenne pepper


Cucumber Sauce Dressing:

1/2 cup Greek Yogurt

1 cup cucumber, diced

Juice of 1 lemon

2 tsp of chopped fresh dill or 2 tsp of dried dill


Salmon Patties:

1 pound skinless, bonesless salmon fillet, cut into cubes

1 Tbsp of canola or 5 sec spray of canola oil


Zucchini Noodles:

4 Zucchini, spaghetti noodles maker

1 Avocado, sliced


Direction:


Making the seasoning mix: In a small bowl combine the paprika, salt, black pepper, onion powder, garlic powder, thyme, and cayenne. Set aside.


Making the cucumber sauce: In a food processor, mix together the yogurt, cucumber, lemon juice, and dill and set that aside too.


Making the salmon patties plays a piece of parchment paper on a cutting board.


In the food processor place salmon cubes. Pulse together the salmon and 2 tablespoons of the oil onto a resembles a coarsely ground meat.


Using a spatula transfer the salmon to the parchment paper and divide into 4 equal balls. Press down on each ball to form a patty.


Generously season one side of each patty with 1 teaspoon of the seasoning blend. Wash your hands.


Heat a skillet to medium high. Take the 1 tablespoon of oil add to skillet. Once heated, add the salmon patties, season side down, add sprinkle to the other side with more seasoning. Cook until dark brown, about three minutes. Flip the patties and reduce the heat to medium. Cook until golden brown on the season side, 2 to 3 minutes more. Remove from the heat.


Assemble the zucchini noodles: Take each of the zucchini and create zucchini noodles with zucchini maker. Place zucchini noodles in a bowl and add cucumber sauce and toss until all the noodles are covered with sauce.

Split noodles into for bowl, add salt & pepper to taste. Place salmon patty on top. Take avocado slice and place on top!


Enjoy!

Note: You can do this recipe with ground beef or turkey! Just cook on both sides for at least 5-6 min. Then turn off eye and cover for two minutes. Make sure it's done in the middle.
